  • 4 cloves garlic cloves whole, unpeeled
  • 2 pounds ripe tomatoes chopped or halved
  • 2 tablespoons olive oil divided, for roasting and cooking
  • 1 small onion finely chopped

Method
 

  1. Preheat the oven to 400°F (200°C). Place the garlic cloves on a baking sheet, drizzle with a teaspoon of olive oil, and roast for about 20 minutes until golden and fragrant.
  2. While the garlic roasts, heat a tablespoon of olive oil in a saucepan over medium heat. Add the chopped onion and sauté until translucent and soft, about 5 minutes, filling the kitchen with a sweet aroma.
  3. In a blender or food processor, combine the chopped tomatoes and the roasted garlic cloves (squeeze out of their skins). Blend until smooth and vibrant red in color.
  4. Pour the blended tomato mixture into the saucepan with the sautéed onion. Bring to a gentle simmer over medium-low heat, stir occasionally, and let cook for 15-20 minutes to develop flavor and thicken slightly.
  5. Season the sauce with salt and black pepper to taste, adjusting as needed for flavor balance.
