- Measure out the rolled oats and pour them into a medium saucepan.
- Add water or milk to the oats, then place the saucepan on the stove over medium heat. Bring to a gentle simmer, stirring occasionally so the oats don’t stick.
- Once the mixture begins to thicken and the oats are partially cooked, stir in the roasted pumpkin puree. Mix thoroughly until fully incorporated, creating a vibrant orange hue and smooth texture.
- Add ground cinnamon, nutmeg, and cloves to the simmering oats, stirring to evenly distribute the spices. The mixture will become fragrant and slightly thicker.
- After about 10 minutes of simmering, when the oats are tender and the mixture is creamy, stir in maple syrup for sweetness. Continue to cook for another 2-3 minutes.
- Remove the saucepan from heat. Scoop the pumpkin oatmeal into bowls, and sprinkle pumpkin seeds on top for added crunch.
- Finish by drizzling honey or extra maple syrup over the top, then serve warm and enjoy the comforting aroma and delightful textures.
