- Crumble the cooled cake into a large mixing bowl until it reaches a fine, even texture.
- Add the frosting to the cake crumbs and mix thoroughly until the mixture is cohesive and sticky, making it easy to shape.
- Using a spoon or cookie scoop, portion out small balls of the mixture and roll them between your palms to shape into even spheres, about 1.5 inches in diameter.
- Place the shaped cake balls onto a lined baking sheet and chill in the refrigerator for at least 30 minutes to firm up.
- Melt the chocolate coating in a microwave-safe bowl or double boiler until smooth and glossy.
- Insert a lollipop stick into each chilled cake ball, then dip them one at a time into the melted chocolate, allowing excess to drip off.
- Stand the coated cake pops upright in a foam block or container and let the chocolate set completely, about 15-20 minutes.
- Add small amounts of colored candy or fondant to create realistic eyeball details, such as irises and bloodshot veins, and affix them onto the hardened coating of each cake pop using a dab of melted chocolate or edible glue.
- Once decorated, place the finished eyeball cake pops on a platter or stand, and they’re ready to serve and delight at your Halloween gathering.
