  1. Place the cherries and lemon juice into the freezer for at least 2 hours until thoroughly frozen, ensuring an icy texture.
  2. Add the frozen cherries, vanilla extract, and a splash of water into a high-powered blender. Blend until smooth and slushy, with a vibrant red color and icy consistency.
  3. Pour the blended cherry mixture evenly into two chilled glasses, filling them about three-quarters full.
  4. In a small bowl, whisk the mascarpone cheese until smooth and creamy, alleviating any lumps.
  5. Spoon or pipe a layer of whipped mascarpone on top of each glass’s slushie base, forming a creamy topping contrasting with the icy drink.
  6. Slowly pour the chilled sparkling water over the layered drinks, allowing it to fizz and create a bubbly, effervescent finish that tickles the nose.

Notes
